Ingredients:
- 1 tbsp of olive oil
- 3 garlic cloves, minced
- 1/4 cup chopped onion
- 1/4 cup chopped bell pepper
- 1 – 8 oz. package of sliced portabella mushrooms
- 1 lb of peeled shrimp
- 1 cup of Jack Miller’s BBQ Sauce
- Jack Miller’s Cajun All-Purpose Seasoning to taste
Cooking Instructions:
In a large skillet, heat oil of medium high heat. Add the garlic, onion, bell pepper, and mushrooms and sauté until they start to soften. Next, add the shrimp and continue to cook until the shrimp are done pink throughout. Drain the juices and return the skillet to the stove. Add the BBQ sauce and whatever amount of Cajun seasoning you would like (I just kind of sprinkle it to cover everything lightly). Heat until warmed through and serve over rice or pasta.
P.S. I found out that this dish is not only delicious, but it’s even better the next day reheated in the microwave as leftovers.
